First, it is extremely important that you get the pan extremely hot. To do so, heat your pan over high heat. It should be heating for about 3-5 minutes before you try to sear your fillets. If you do not get the pan hot enough, you will not get the nice sear that you want for that wonderful crunchy crust on your fillets. It is only after the pan gets extremely hot that you should be adding the butter or the oil for searing.
Now you need to ensure that your butter or oil gets very hot. After you are sure it is hot, carefully slide your fish into the pan. For thinner fillets, the heat can stay on high. For thicker options, turn them down to about medium. Another important tip is to make sure you do not do anything with the fish.
